Gypsy's Garden Fresh Tomato Juice Beverage

Description
If you ever find yourself with a surplus of garden fresh tomatoes, this beverage is a great idea! Similar to V-8 Juice!

What you need

1 8 qt pot
1 large soup ladle
1 large cooking spoon
1 large water bath canner
8 qt size canning jars with bands and lids.

Ingredients

16 lb ripe, red tomatoes (Creole are the best)
1 cup diced carrots
1 cup chopped celery
1 cup chopped green bell pepper
1 cup chopped onion
1/4 cup chopped parsley
1 tbs.. salt (optional)
bottled lemon juice

What you need to do
Wash tomatoes; drain. Peel, remove core and blossom ends. Cut into quarters.
Combine tomatoes and vegetables in 8 qt pot; simmer 20 minutes, stirring to prevent sticking.
Press mixture through a sieve or food mill. Stir in salt (if desired)
Heat juice for 5 minutes at 190 degrees F. DO NOT BOIL.
Add 2 tablespoons lemon juice to each quart jar.
Ladle hot juice into hot jars, leaving 1/4 inch head space. Adjust 2 piece caps.
Process jars 45 minutes in a boiling water canner.
Yield: about 7 or 8 quarts.
Serves 10- 12
