
Sautéed Carrots

What you need
1 12" cast iron frying pan with cover
1 large cooking spoon
1 large cooking knife
1 small stainless steel strainerIngredients
10-12 medium carrots sliced fine
1 white onion sliced thin (optional)
1/2 pound butterWhat you need to do
Over low heat, melt butter in 12" frying pan. Stir in carrots and cover. Cook for 1 hour stirring occasionally.
Uncover and raise heat to medium to brown carrots, stirring occasionally. Watch you don't burn them. When they are lightly browned, after about 15 minutes, strain the butter off and place in a serving dish. Serve over rice.
