Real Cajun Coffee

Description

This is coffee made the old fashioned way, the way our forefathers brewded and enjoyed. Brewed with a real "drip" coffee pot and coffee and chicory; Real Cajun Coffee! Now, you can enjoy this rich, robust, flavorful coffee to! I'm o' toll you how...

What you'll need

1 drip coffee maker (non electric)*
1 2 quart pot
1 coffee measuring spoon

Ingredients

1 measure (2 tbsp.) of Coffee and Chicory**
1 1/2 quarts of water

What you need to do
Boil 1 1/2 quarts of water in the pot. Put the reservoir on top of the coffee pot and place lower filter in reservoir (filter basket). Put one measure of Coffee and Chicory in the filter basket of the coffee maker and put restrictor (upper filter) in the basket. When water boils, pour over the restrictor, fill to the top. Return the water to the heat. Let it seep down into the pot. Don't be in a hurry! When the water has drained into the grounds, repeat the process until all of the water is in the pot it should be about 1 1/14 quarts or about 4 1/2 cups.

Pour into cups or mugs, add milk and sugar and enjoy.

* drip coffee maker (non electric)
Don't try to use an electric coffee maker, it just won't work. Cajun coffee is strong and I don't care how much coffee you put into an electric coffee maker, it's not strong enough and doesn't have the right taste! I searched and searched for a Real Drip coffee maker for years. It's the kind of coffee maker we used before the invention of the percolator, which as far as I'm concerned, ruined coffee! Well, I found one on the Internet and I am enjoying coffee like in the old days; strong, flavorful and robust; the way it should be.
