Pig Tails in Brown Gravy

What you need
1 Dutch oven with cover
1 Large cooking spoon
1 Large cooking knifeIngredients
2 lbs. pig tails
1/4 cup olive oil
1 large onion, chopped
1/2 cup green onions, chopped
2 cloves garlic, minced
2 beef bouillon cubes
1 4-oz. can mushrooms, sliced (optional)
1 tsp. salt
1/4 tsp. black pepper
Louisiana Hot Sauce to taste
2 cups water
1/4 cup dark roux
1 tbsp. fresh parsley, choppedWhat you need to do
Over a low heat, brown pig tails in olive oil. When brown, remove and set aside.
Pour off about 1/2 the oil. Add onions, green onions and garlic. On low fire, saute until tender. Stir in mushrooms. Add pig tails and cook slowly 20 to 30 minutes, stirring often. Season with hotsauce, salt and pepper and parsley.
Add water, bouillon cubes and roux. Cook on medium heat for about 45 minutes or until pig tails are tender and gravy is thick. Serve over fluffy rice.
