
What you'll need:
1 Large glass mixing bowl with cover
1 Wooden mixing spoon
3 quart sauce pan or pot
1 Slicing knife
Ingredients:
4 Medium size Russet Potatoes (do not
use New, Red or White potatoes)
1/2 onion chopped fine
2 or 4 green onions chopped fine
3 hard boiled eggs
1/4 cup Parsley chopped very fine
1/2 cup of lettuce chopped fine
3/4 to 1 cup of mayonnaise
1 cap full of: distilled vinegar or
apple cider vinegar or lemon juice
1 tbls. Paprika
1 tsp. salt (or to taste)
1/2 tsp. pepper (or to taste)
What you need to do:
Wash the potatoes and place them and
the eggs in the pot full of water and bring to a boil. After
the water comes to a boil, time them
and boil for 1//2 an hour. Remove potatoes and eggs to
a colander and let cool. Peel and
slice the potatoes in the large mixing bowl. Chop eggs. Put the
onions, green onions, parsley and
lettuce into the bowl and stir well. Stir in the mayonnaise and
lemon juice, salt and pepper to taste.
Mix thoroughly. Sprinkle with Paprica. Cover and place
in refigerator to chill.
Serves: 6 to 8
