Perfect Fluffy Rice

Description

This is the way we do rice in Louisiana, it's fluffy and you can count the grains. It's an ART to make perfect fluffy rice, but if you follow the instructions to the letter, you will be successful. It's delicious, and it's more absorbent and mixes well with almost anything.

What you'll need:

1 1 cup measuring cup
1 Table spoon
1 Rice pot (should be heavy Aluminum with a tight fitting cover)
1 iron plate 8" x 8" x 1/4"

Ingredients

2 cups of water
1 cup Long Grain Rice
1 tsp. salt

What you need to do:

Place the plate on a back burner over a very low heat until the flame almost goes out.

Measure 2 cups of water into pot over high heat. Stir in salt and bring to a boil.

Stir in a little more than 1 cup of rice into pot. Return to a boil, stirring and when it starts to boil up, stir. Stop stirring and let it come to a vigorous boil. Let it boil almost to the top, cover and immediately reduce heat to low. Cook on low for 20 minutes. Do not remove cover!

Now this is the tricky part. Place the pot of rice on the plate on the back burner and slide the cover about an inch away from the edge and cook another twenty minutes. Remove the cover and remove the pot from the burner and let sit for 10-15 minutes. Fluff the rice, transfer to a bowl and serve.
