Mom's Pocket Burger

Description
Another unusual and unusually good burger is made with two thin patties welded together with good things inside and topped with cheese, lettuce, tomato and onion if you choose. It's best Barbequed!
What you need

1 large cast iron frying pan
1 spatula
1 large kitchen knife

Ingredients

2 pounds ground beef
1 package of American cheese
1 can of mushrooms
1 can of Ortega chilis butterflied
4 tomatoes sliced
1 head of lettuce leafed
2 large brown onions sliced (optional)
1 package of hamburger buns
salt and pepper

What you need to do

Make 1/4" thick patties about 1/2" larger around than you would normally. Place mushrooms, 1 slice of Ortega Chili and a slice of onion not quite to the end. Place the second pattie over the first and crimp around the edges sealing in the vegetables. Over medium heat put a little vegetable oil in frying pan. Fry on one side 10 - 12 minutes, flip over for another 10 - 12. When burger is almost done place a slice of American cheese over it to melt a little. Put mayonnaise on bun top and bottom, place burger on bottom bun, top with lettuce and tomato. Salt and pepper and serve. Onion (optional)
