
Here are the first of what I hope will be many contributions to Cajun Cookery. While these recipes do not have to be Cajun in origin, all are welcomed. So, dig in and enjoy!

These are recipes collected from my family and friends. There are many more but these are the best ones. These are the recipes that were served at special family affairs and church socials. These are the dishes that were tried and said "I got to have that recipe." These are the dishes that were served when something special was called for. These are something different for when you have that special occassion when you want to serve something that will be remembered.

Make regular peanut butter sandwiches except substituting hamburger buns instead of bread. Take a Hershey Chocolate bar and put a layer of the Hershey Chocolate bar evenly, edge to edge, on top of the peanut butter before putting on the top bun. Now you can put on the top bun. Put under the broiler at about 350 degrees. Lightly brown and everything melts. Very messy, but very good! They go fast!
Strawberry Pizza Crust: 1 and 1/2 cup flour 1 and 1/2 stick margarine 1 cup chopped pecans 2 tbsp. sugar Press in pan and up sides. Bake at 350 for about 15 minutes. Topping: 8 oz. cream cheese 2 cups confectioners sugar Cream together and add 8 oz Cool Whip. Spread on cooled crust. Add 1 quart strawberries and pour glaze over top. Save some filling for garnish, if desired.
Zucchini Bread 3 eggs 2 cups sugar 1 tsp. salt 2 cups grated zucchini 1 tsp. almond flavor 1 tsp. vanilla 1 cup oil 2 cups flour 2 tsp. baking soda 1 tbsp. cinnamon 1/4 tsp rum flavoring 2 tsp. baking powder Beat together eggs until frothy. Add sugar, oil and flavorings and beat. Stir in zucchini, flour, cinnamon, soda, salt and baking powder. Fold in nuts (optional). Bake in two greased pans 8"x 4 and 1/2x 3 at 350 for one hour. Cool for ten minutes.
Chocolate Eclair Cake 1 box graham crackers 2 small (3 and 3/4 oz) pkgs. French Vanilla Instant Pudding 3 cups milk 1 (9 oz) Cool Whip Butter 9 x 12 pan. Cover bottom of pan with graham crackers. Beat milk and pudding together and fold in Cool Whip. Put 1/2 mixture over crackers then another layer of crackers, then rest of pudding mixture. Finish with another layer of crackers. Frost with chocolate fudge frosting and refrigerate overnight.
Dirt Pudding 2 small pkgs. French Vanilla Instant Pudding 3 cups milk 1 (8 oz.) cream cheese 1/2 stick margarine 1 cup confectioners sugar 1 (16 oz.) Cool Whip 1 large pkg. Oreo Cookies Beat together pudding and milk just long enough to blend. Mix together the cream cheese and margarine. Add this to the pudding mixture with a whisk. Gradually add the Cool Whip and sugar. Crunch Oreo Cookies and put half of the crumbs in an 8 x 12 pan. Then add the pudding and the rest of the Oreo Cookies.
Hawaiian Wedding Cake 1 pkg. yellow cake mix 1 large box instant vanilla pudding 1 pkg. Cool Whip 1 large can crushed pineapple (well drained) or substitute strawberries 1 small box powdered sugar 1 and 1/2 cups pecans 1 (8 oz.) pkg. cream cheese 1 pkg. shredded coconut Prepare cake mix and divide cake into two equal layers. Prepare pudding and spread it between the layers. Place half of the pineapple (or strawberries) over pudding. Sprinkle 3/4 cup pecans over pineapple (or strawberries). Add remaining half of pineapple (or strawberries) to top layer. Next mix Cool Whip, powdered sugar and cream cheese and beat until fluffy. Fold in remaining 3/4 cup pecans. Spread this over entire cake. Sprinkle cake with shredded coconut. Keep refrigerated. Options: Sour Cream cake may be used instead of yellow cake mix. Merichino cherries or halved sweetened strawberries may be used as decoration. Note: Sweeten and slice strawberries when using them in place of pineapple.
Peach Kuchen 3 tbsp. sugar 1/4 tsp salt 1 cup flour 1/4 lb. butter Mix above items together. Add 1 egg yolk. Put in square pan and bring a little up on the sides of the pan. Custard white from the above egg 2 whole eggs 3/4 cups sugar 1 tsp. vanilla Beat together with fork. Put halves of peaches on crust and pour custard over all. Bake one hour at 375.
