Chicken Jambalaya
DescriptionThis is a hearty main dish you'll serve when you have guests. It has lots of good stuff in it; mouth watering chicken, tender tomatoes and bell pepper... and it is dee licious! But be prepared to spend a little time in the kitchen.
What you need
1 Dutch oven with cover
1 Large cooking spoon
1 Large cooking knifeIngredients
1 3-lb.broiler chicken, disjointed
1/2 cup butter or margarine
1 large onion, chopped coarse
1 cup celery, chopped medium
3 cloves garlic, minced
2 medium tomatoes chopped fine
1 4-oz. can mushrooms, sliced
1 green bell pepper chopped medium
2 tsp. salt
1/4 tsp. black pepper
3-4 joogs of Louisiana Hot Sauce
2 cups water
2 cups uncooked rice
1 tbsp. green onion tops
1 tbsp. fresh parsley, choppedWhat you need to do
Over a low heat, melt butter or margarine in Dutch oven. Salt and pepper chicken parts and brown in butter. When brown, remove from Dutch oven and set aside.
Pour off about 1/2 the butter. Add onions, bell pepper, celery and garlic. On low fire, sauté until tender. Stir in tomatoes and mushrooms. Cook slowly 20 to 30 minutes, stirring often. Season with hot sauce, salt and pepper.
Add water, rice, and chicken pieces. Raise heat to high and bring to a boil. Stir once, cover and reduce heat to low. Cook for 45 minutes. Just before serving, stir in onion tops and parsley. Remove to serving dish.
Serves 6 to 8
